'Sie' vs 'du' with shopkeepers

Which form should we use when talking to shopkeepers, bus drivers and waiters? What about when asking and giving directions?

Tip: "Sie" is more polite than "du". ;)

Blaveloper is perfectly right. You should use 'Sie' in these kind of situations. However, if a shopkeeper is your age and you feel that he is easy-going, a 'du' wouldn't be that devastating I guess :=)
