The first (such) is the correct one.

Use 'such' if you want to modify an attributive adjective that appears before a noun. i.e. 'such nice children'

You can use 'so' to modify predicative adjectives i.e. 'Those kids are so noisy.'

In this case, "such" would be the appropriate term as you are utilizing it as an adjective, which "such" would fall into that category. If you were using it as a noun, then you would have to use the word "so". However, they are both terms that are as a result of something, so you have the right therms in mind.

I would go with your first sentence because it makes more sense and is grammatically correct. However, I would either cross out "people" or "children" in your first sentence because that will make more sense to me. Here's are the examples:

They are such kind people.

OR

They are such kind children.
