In this case, "such" would be the appropriate term as you are utilizing it as an adjective, which "such" would fall into that category. If you were using it as a noun, then you would have to use the word "so". However, they are both terms that are as a result of something, so you have the right therms in mind.

I would go with your first sentence because it makes more sense and is grammatically correct. However, I would either cross out "people" or "children" in your first sentence because that will make more sense to me. Here's are the examples:

They are such kind people.

OR

They are such kind children.
